I had a request to make a Sweet Potato Pie so here go. This recipe is easy to make, if I can do it you can do it. Sweet Potato Pies are great for Thanksgiving or Christmas, or any occasion. Ingredients: 1 large sweet potato 1lb (enough to make 2 cups) 1/2 cup of softened unsalted butter (115g) 1/2 cup of white granulated sugar (105g) 1/2 cup of light brown sugar (100g) 1/4 cup of whole milk or heavy cream (60ml) 2 eggs 1/2 tsp. of ground nutmeg (2g) 1/2 tsp. of ground cinnamon (2g) 2 tsp. of vanilla extract (In the video I made a mistake and said 2 Tablespoons :)) (10ml) 1 9inch piecrust For homemade pie crust check out my apple pie video:    • How to Make Apple Pie - Homemade Appl...   Transcript: Hello and welcome back to In the Kitchen with Matt, I am your host Matt Taylor. Today I will show you how to make a sweet potato pie, mmm yummy. I had a request to do my take on a sweet potato pie. So there we go I am going to show you how to make a sweet potato pie. It is really easy to do, if I can do it, you can do it. And it is perfect because tomorrow is Thanksgiving, so I can bring this to Thanksgiving dinner, oh yeah. Let’s get started. So first what we do is we are going to boil or bake our sweet potato. Now I have one large sweet potato here, it is a little bit over a pound, umm and I am going to need about 2 cups of sweet potato once it is all cooked. You can boil it or bake it, I am going to bake this in the oven for 350 degrees for at least an hour until a fork pushes in it nice and easy. Also you can boil it if you want, there are a lot of recipes that will say to boil it, it is totally up to you, both methods are good, I prefer the baked method. So what I am going to do is put it on this baking sheet, and bake it for at least and hour. On to that step. All right once we take it out of the oven, we want to peel it, and what we do, you are going to want to let it to cool, enough to where you can handle it, with out your fingers getting burnt. The peel will come right off, just go ahead and grab strips of the peel and it will come right off for you. All right and then with a fork we are going to take the sweet potato and we are going to mash it a little bit, same process if you boil the sweet potato, at this point what you could do is put this in a food processor if you like, instead of using a mixer which we are going to use, it helps to get some of the strings out. All right once we finish mashing our sweet potato, we are going to go ahead and take one half cup of softened butter, unsalted, then go ahead and take a mixer or if you have a food processor, use that. Scrape the sides with a spatula. Okay and once we have the butter all incorporated, then we want to add the rest of the ingredients. One half cup of white granulated sugar, one half cup of brown sugar, mash that up a little, we are going to have one forth cup of milk, whole milk, or you can use cream, one half teaspoon of nutmeg, one half teaspoon of cinnamon, two teaspoons of vanilla extract, and then two eggs, okay we will go ahead and mix this all together, scrape the sides a little bit. Now this is a little bit liquidly, and this is when we add flour, I have about two tablespoons of flour here, and I am going to just add a little bit of this at a time, just to thicken this up a little bit, I have one tablespoon of flour first, mix that in, and then one more table spoon of flour. Okay and it is still just a little bit too runny for my liking, so I am going to add just a little bit more flour, about another tablespoon. You can make a homemade piecrust, I didn’t to that for this video, but if you want a great homemade piecrust, go ahead and check out my apple pie video, I show you how to make a really nice flaky buttery piecrust. And then what I did with my piecrust is this is a 9inch pie pan, I pre-baked this in the oven at 350 for 10 minutes, and what that is going to do is help keep the piecrust from getting soggy. And then what we will do is we will just take our puree mixture here, use a spatula to get it all nice and out of there. Okay and then we will bake this in the oven for 55 to 60 minutes.
