Using an immersion blender, process blueberries or cranberries for about 2 minutes, mashing the fruit. Store in a cool dark place for 3 weeks, stirring every other day (or whenever you remember.) After 3 weeks, stir in the 1 1/2 cups sugar or to taste. Store in a cool dark place for 2 weeks. Strain mixture through a cheesecloth lined sieve, squeezing the fruit. Pour into bottles, add remaining sugar, stir and let sit another 2 to 4 weeks in a cool dark place. Make this “cordial”early, the longer it sits the better! To Store: It can be stored at room temperature for about a year.
